Ingredients (for 15 servings): baked sweet potato (105 g), sunflower or coconut oil (75 g), oatmeal (160 g), rice flour (140 g), baking soda (5 g), rice syrup (100 g), shredded coconut (20 g) , dried apricots (80 g).
1. Preheat oven to 160 ° C. Combine all the ingredients in a bowl and knead the dough well with a silicone spatula or hands. Make the dough into round balls weighing about 40 g and place them on a baking sheet lined with parchment paper.
2. Shape the cookie with a pastry ring or simply flatten it with your hand. Bake in oven for about 20 minutes at 160 ° C.
